Apples have been around for centuries and the earliest apple pies and tarts date back to the Middle Ages. While pies are probably the most common use for apples other than eating them whole, there is a wide array of recipes that use the versatile apple as a main ingredient. Appetizers, salads, baked goods and main meals all benefit from the succulent flavor of the apple.

Apple avocado salsa combines the distinct flavors of mild avocado, sweet or tart apples, and spicy jalapeno peppers with acidic juice, sweet sugar and tangy garlic to create a unique appetizer that goes well with crackers or tortilla chips. Apple leather is a tasty snack that calls for cooking apples, adding sugar or lemon juice if necessary to achieve the desired taste, and sprinkling with cinnamon and nutmeg. The cooked apples are spread over waxed paper and allowed to dry overnight in a low temperature oven or on the counter for two to three days. The result is a flexible fruit roll that can be served as an appetizer or a snack.

Waldorf salad is a light, refreshing dish that can be served as a starter or, with a few modifications, it can become the main meal. Tart or sweet apples are cut into chunks and tossed with chopped celery, walnuts and mayonnaise. The mixture is spooned over a bed of shredded Romaine lettuce or watercress. Topping the salad with chicken, turkey or salmon adds a protein element that makes it nutritious and filling enough to be considered a main course.

Apple pie is the most obvious and popular dessert that utilizes the fruit. Mixing sweet apples like Granny Smiths with tart apples likes Cortlands can create a tasty blend. Cinnamon and sugar are standard ingredients, although some recipes use brown sugar in place of white or sprinkle nutmeg in the pie for a little extra taste. Cobbler and Crisp use a similar blend of apples and spices for a base, but the toppings are quite different. While the base of the cobbler is topped with a sweet batter topping, the crisp is topped with a crumble of oats, brown sugar, butter, cinnamon and nutmeg.

Applesauce is a wonderful complement to chicken, beef, ham and pork dinners, and apples also make a terrific filling for stuffed pork chops. Thick pork chops can be sliced open to form a pocket that can hold slices of apples or a stuffing can be mixed using chopped apples, breadcrumbs, onion, celery and parsley and inserted into the pocket. The meat and apples cooked together make an enjoyable feel-good meal.
